Making Qatayef

Yesterday while Ryan and I ran errands with our co-worker Suzi, she noticed our curiosity about the huge mounds of pancakes we were seeing at all the bakeries downtown. She explained that they are called Qatayef and that they are only made during Ramadan. It's one of the traditional food items that is eaten daily at Iftar to break the fast.

We showed up at work this morning to a stack of these pancakes and all the ingredients to turn them into the famous dessert!


First you fill the Qatayef with walnuts, coconut, cinnamon and sugar.


Then you pinch the sides together to make a little dumpling type situation.


Then you bake or fry the Qatayef till they are hot and golden brown.  Finally, you either soak them in sugar water or you can just put some sugar water on top.


Delicious!
